Three Bean Turkey Chili

Looking for a set it and forget it dinner tonight? You can make this stove top or throw this in the crock pot or in the Instant Pot Pressure Cooker (Read about that here). Our whole family loves this chili so much that my kids will ask me to pack it for them for lunch the next day. Yes, it’s true.  I don’t want to brag buuuuut, this recipe won me second place at a major chili cook off…okay it was just a small church one but still!  Haha! It’s super healthy too! I love how this chili has garbanzo beans (chickpeas) and ground turkey.  It makes it feel a little different but still has that great chili flavor.  I like to pair it with some corn bread muffins or some tortilla chips and call it good. Try it out and be pleasantly surprised that chill can be this healthy and easy.

Three Bean Turkey Chili

1.3 lb (20 oz) ground turkey

1 small onion, chopped

1 (28 oz) can diced tomatoes

1 (16 oz) can tomato sauce

1 (4.5 oz) can chopped chilies

1 can garbanzo beans (chickpeas), undrained

1 can black beans, undrained

1 can small red beans, undrained

2 garlic cloves

1 tsp. oregano

1 tsp. paprika

2 tbsp chili powder

  1. Brown turkey and add in chopped onions and spices and cook onions for a 3-5 minutes.
  2. Add in all other ingredients, cover and simmer for 30-40 minutes stirring occasionally.
  3. Remove cover and allow to cook another 10 minutes uncovered.
  4. Serve with sour cream, onion, cilantro and chips.
