Corn & Cilantro Tuna Salad

Do you ever just have that craving for a fresh and crispy salad? To be honest, I don’t usually crave salad but when I do, this is one of my go to recipes. It’s super fast and I almost always have everything on hand. I like to eat this with corn chips or tostadas. This salad is a great base that you can play with. Add in some avocado, hard boiled egg, olives, canned beans, cucumber and even celery would be tasty. It is super refreshing and if you’re not a tuna fan, you can always use rotisserie or canned chicken too!  The fresh lemon juice gives it that super light and fresh flavor and who isn’t a fan of the corn/cilantro combination? Perfection! If you want to zest it up a little, add some splashes of Tapatio Mexican salsa or some Sriracha. Mmmmmm This recipe is definitly one of those salads you won’t feel weighed down by. Fresh, fast and satisfying!

Cilantro & Corn Tuna Salad

1.5 cups of your favorite greens mix (I used Spring Mix)

1/2 cup fresh, frozen or canned corn

2 green onions, chopped

1 tomato, chopped

1 can of albacore tuna, well separated

1 Tablespoon chopped cilantro

Splash of olive oil

1 Tablespoon freshly squeezed lemon juice

1 Tablespoon cilantro/avocado dressing

Salt and Pepper to taste (DON’T FORGET THIS!)

  1. Combine all ingredients and drizzle olive oil, lemon juice and dressing. Stir to incorporate.
  2. Serve with corn chips.

    My favorite brand of cilantro/avocado dressing. There are many options of this dressing flavor but this particular one is in the refrigerated section. This dressing is so good with lots of other salads and even as a dip.

My  kids never complain with this salad either! Just simple enough to not scare off super picky eaters.
