Smothered Pork Chops with Brown Rice & Quinoa

IMG_3487Pork chops? Gravy? All on a bed of rice you don’t actually have to make? Sound good? It is! These chops have an amazingly flavorful gravy which is a sure-fire crowd (or family) pleaser. Instead of making mashed potatoes, I like to serve it right along with one of my favorite Costco time-saver sides. This rice is super tasty with the garlic in there and it’s already pre-cooked so all you have to do is open it about an inch on the top and throw it in the microwave for 90 seconds. It comes out fluffy, steamy and ready to go. The rice is sold in a box of 6 bags for around $10.  I usually use 2 bags for my family. I’ve seen them many times on coupon at Costco too. My kids love it, especially smothered in gravy. Ha! If you’re looking for a way to squeeze some quinoa into your family, this is a great start.

Smothered Pork Chops

  • 1-1/2 cup flour
  • 1  1/2 teaspoon seasoned salt
  • 1 teaspoon lemon pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 2 teaspoons garlic powder
  • 1/4 tsp. black pepper
  • salt to taste
  • 8 pork chops
  • 1/4 cup olive oil
  • 6 Tablespoons butter, divided
  • 1 onion, peeled
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 Tablespoons flour
  • 2 cups chicken broth,  more if you need to thin the sauce
  • 2 Tablespoons heavy cream
  1. Pat dry your pork chops, set aside. In a large shallow dish combine flour and all spices and mix to combine.
  2. In a large skillet, heat oil and 2 Tablespoons butter. Dip pork chops into flour mixture and cook in skillet for a couple minutes on each side until golden brown. Remove from pan and set aside. Repeat in batches until all chops are cooked.
  3. In the same skillet, add in onion and bell peppers and cook 10 minutes. Remove and set aside.
  4. In the same skillet add in 3 Tablespoons of butter and 3 Tablespoons of flour and make a roux. Whisk and cook until dark golden brown.
  5. Whisk in a little broth at a time making sure to get out lumps. Add in heavy cream last. You can use more broth if it’s too thick. Add in veggies and serve over rice or potatoes.
